A sandwich made from cauliflower?

Today I enjoyed a delicious low-carb toast sandwich for lunch. This sandwich recipe is a healthy and low-carb alternative to the traditional sandwich. The sandwiches are made from cauliflower rice! Cauliflower is low in carbohydrates and is rich in fiber, vitamins and minerals. I also used spicy cheddar as a fill, but you can also use other types of cheese. In addition, you can of course also invest the sandwich with ham or other meat products.

Tips for making the cauliflower toast:

As you can see below in the recipe, it is quite a lot of work to make the low-carb sandwiches. This is mainly because you have to grind the cauliflower into rice grains in the food processor or blender. Do you have little time, but would you like to try the sandwiches? Then buy ready-made cauliflower rice! This ready-made variant is now available at many supermarkets.

  • 1 small cauliflower
  • 1 large egg (L)
  • 50 g mozzarella cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 the boter
  • 70 gr spicy grated cheddar

Preparation method

    1. Place an oven rack in the oven and then preheat the oven to 220 degrees. Pack a sheet of baking paper and grease the sheet with some olive oil.
    2. Now take the small cauliflower and remove the leaves and black spots. Cut the cauliflower in half and remove the stump. Cut what is left over into small florets. Put the roses in a food processor or blender and turn them on until small rice grains are formed. Repeat this until you have made rice from all the florets.
    3. Then put the cauliflower rice in a microwave-safe container and cook in the microwave for 8 minutes. Allow to cool slightly after cooking. When the rice has cooled you can put it in a clean tea towel. Then squeeze all the moisture out of the rice.
    4. Put the dry rice in a large bowl and add the grated mozzarella, egg, salt and pepper. Mix well in a bowl with a whisk. Divide the batter over the sheet of baking paper and form four equally sized squares. Bake the rolls for 16 minutes until golden. Allow to cool for at least 10 minutes and then carefully remove the rolls from the baking paper with a cheese slicer.
    5. Now cover each side with butter. Heat a frying pan over a medium heat and put the bun with the butter side in the pan. Add grated cheddar to the sandwich and add a sandwich on top with the butter side up. They now lower the heat and bake for 2-4 minutes on each side, until the cheese has melted. Repeat with the other sandwiches!
