Low Carb Vanilla Ice Cream With Delicious Taste


Do you also love ice cream? It is my favorite dessert! Unfortunately, when following the low-carbohydrate diet, you are no longer allowed to eat traditional ice cream. Nowadays there are many sugar-free alternatives in the supermarket. However, the ice of these brands contains relatively many carbohydrates per 100 ml. The taste is also often artificial and the price very high. It is much tastier and cheaper to make your own low- carbohydrate ice cream ! That is why we made low carb vanilla ice cream ourselves yesterday. Great to eat as a snack on a hot day or as a dessert after dinner. It takes a little more time to make, but it is definitely worth it!

Low-carb vanilla ice cream

Ingredients

  • 2 cans (800 ml) full-fat coconut milk
  • 250 ml whipped cream (35% fat)
  • 65 gr Erythritol
  • 1 tsp Vanille aroma
  • pinch of salt

Preparation method

  1. Place the cans of full-fat coconut milk in the fridge for at least 3 hours, preferably an entire night. Then spoon the coconut cream from the can into a large bowl and leave the moisture in the can.
  2. Grab a hand mixer and whisk the coconut cream in the bowl until creamy and fluffy.
  3. Now put the whipped cream in another bowl and beat with a hand mixer or whisk at high speed, until the whipped cream is stiff. Occasionally stop if the cream becomes thick and check if it is good. Finally, carefully stir the sweetener, vanilla aroma and salt into the whipped cream.
  4. Now carefully stir the whipped cream into the whipped coconut cream. Taste a little and add more sweetener if necessary. Then scoop the mixture into a cake pan or bread pan and put the ice cream in the freezer.
  5. Remove the ice cream from the freezer after at least 5 hours and divide into 8 portions.
